You may have to go to 135s, maybe bigger if you are compensating for uneven air flow and pressure around the pods. It also depends on the bike, rider and how air flows around the intakes at different speeds.

If it ran good across the range with the 125s before you cut out all the backpressure you may very well have to go up two steps to 135.

I ran 135s with tuned crossovers (1&4 ganged, 2&3 ganged), and for a short while 140s with the early TT drags (larger diameter) in the chop before I added light baffles. The light baffles gave me about 3 bike lengths on my cocky harley buddies. But the gas mileage went to hell until I gave the engine a little backpressure.

If you did a plug chop at the problem speed and all the plugs are white or light grey it is lean across the board.

Is it running the same now with 135s that it did with baffles and 120s?

I'd rather give someone a tool than a solution. Give them an answer and they'll always expect it. Teach them how to find the answers for themselves and they will spend a lifetime learning.
