The 18" rims I have seen are drilled for a smaller HD hub, thus the spokes are not in a straight line. You never really know what application they are drilled for if you do not buy them specifically for the model you have. Ever seen a cone hub or a big drum front brake wheel up close? Way different angles. I have never seen spokes "bow", but have seen nipples being crooked compared to the spoke. Should not be a huge deal with stainless...chrome would peel. Structurally, any time you put together parts not designed for eachother you will have some issues. Should not be dangerous as long as you check them periodically to make sure no problems arise. And yes, you need to grind off the excess inside the rim and use a rim strap. In my opinion, you should NEVER elongate the holes to correct the angle! That would enable the nipple to pull through the rim. A wheel is gonna give you some warning if things are failing. It will wobble or vibrate if it is not right.

Remember, check the spokes often. Be very careful when tightening so you do not stress the spoke or knock the wheel out of true. If one spoke is loose, match tightness with those around it. If a group of them is loose, I recommend re-truing the wheel. Any wheel builder will tell you that spoked wheels are not meant to mount up and forget it.
