I'm guessing you would take the measurement (length) of the stock forks (compressed with full bike weight on them) and the springer length should be the same. Finding a springer that fits a Honda neck may be a challenge, you might have to get a new stem put in place (springer mod) or swap your neck for a harley size (frame mod). You might be able to get custom cups and bearings made (I heard about that before), someone with more knowledge of this will chime in. When you get the frame hardtailed are you going to lower the rear at all or keep it stockish height? If you lower then you want to take that into account so you can get the springer a little shorter so the frame sits level.
